Ashmead’s Kernel [7.7% ABV] - CiderView Orchards, WA - A seedling planted by one Dr. Ashmead in England around 1700, Ashmead's kernel is excellent for both eating and cider with notes of honeydew and lemon spree candy. It is boldly tart, fruity and aromatic. 100% Ashmead's Kernel apples grown at CiderView Orchard, Yakima, WA. 2019 Vintage This cider is semi-dry. (375ml only)

Columbia Crabapple [5.9% ABV] - Bailey Nursery, WA - Columbia Crabapple is a modern apple that showcases the aroma of citrus zest, jasmine and cantaloupe. Flavors of orange creamsicle, lemon drop candy, the tart notes of passion fruit, minerality and a tannic edge shine through. It is refreshing, bright and lively. 75% Columbia Crabapples grown at Bailey Nursery, WA & 25% Colorado-grown Gala apples. 2019 Vintage This cider is semi-dry. (375ml only)

Crimson Gold [7.5% ABV] - O’Brien Farms, WA - Crimson Gold is an crabapple was developed by Albert Etter, a creator of other exceptional heirloom apples, in California during the mid-twentieth century.  This apple is for the tart lover, with razor sharp kumquat acidity that tastes like a tart mimosa, tight minerality, and light floral notes. 100% Crimson Gold apples from O'Brien Farms, Prosser, WA. 2021 Vintage This cider is semi-dry. (375ml & 750ml)

Dabinett [7.8% ABV] - Idyll Acres, OR - A famous English apple used exclusively for cider making, not for fresh eating. Dabinett is bolder than most, with big tannins, evoking English breakfast tea, baked apple, caramel, and dark chocolate. It is rich, thick and golden. 75% Dabinett, 15% Bramley seedling, 10% bittersweet apple blend from Idyll Acres, OR   2022 Vintage This cider is semi-dry. (375ml only)

Golden Russet [8.1% ABV] - CiderView Orchard, WA - This apple is perhaps America's most important heirloom, celebrated and grown from coast to coast. It is particularly ugly, named for its potato-like russetted skin. However, its flavor and aroma remind us of guava, pineapple, passion fruit, and honeysuckle. It is so tropical, it tastes like vacation. 100% Golden Russet apples from CiderView Orchard.  2022 Vintage. This cider is semi-dry. (750ml only)

Gravenstein [5.9% ABV] - Harmony Orchards, WA - Gravenstein is a multi-century heirloom from Europe that reached its greatest American prominence in Sonoma County, California. The apple is sharp and perfumed evoking aromas both tart and smooth. The combined effect ranges from lemon butter cream to cranberry orange scone. 100% Gravenstein apples from Harmony Orchards, WA. 2021 Vintage This cider is medium. (375ml only)

Hudson’s Golden Gem [7.5% ABV] - Idyll Acres, OR - Hudson's Golden Gem was found as a spontaneous apple growing along a fence line in Oregon. It evokes warm, bakery aromas and flavors like vanilla wafer cookie, pecan, frosted gingersnap, and nutmeg. 75% Hudson's Golden Gem and 25% Wickson Crabapple from Idyll Acres, OR. 2021 Vintage This cider is medium. McIntosh [6.7% ABV] - Uncle John's Cider Mill, MI - Discovered by John McIntosh at his farm in Canada in 1811, the apple has a distinctive vinous aromatic and flavor profile that persists through fermentation. It is crisp, perfumed, and smooth, reminiscent of cream soda, peach rings, and lemons. 100% McIntosh apples grown at Uncle John's Cider Mill, St. Johns, MI. 2022 Vintage. This cider is semi-dry. Nehou [7.8% ABV] - Ringsrud Orchard, WA - Nehou is a classic French cider apple. It is reminiscent of honey and chamomile tea, baked apple, a dusting of cocoa, with a soft tannic core. 75% Nehou and 25% Calville Blanc d'hiver from Ringsrud Orchard in Wenatchee, WA. 2021 vintage. 2021 Vintage This cider is medium. Newtown Pippin [6.1% ABV] - CiderView Orchards, WA - Newtown Pippin is one of America's oldest apples and one of Thomas Jefferson's favorites. The apple is full flavored and mouth watering. It evokes lime zest, green apple, banana, lemon and tea of an Arnold Palmer, a touch of honey, and crushed rocks. 100% Newtown Pippin apples grown at CiderView Orchard, Washington. 2019 Vintage This cider is semi-dry. Northern Spy [6.2% ABV] - Uncle John's Cider Mill, MI - Northern Spy is a very old American apple that fittingly grows well in cold, northern climates. It is tart and refreshing, boasting notes of clementine, peach, and fresh rain on cement. 100% Northern Spy apples from Uncle John's Cider Mill. 2022 Vintage. This cider is semi-dry. (750ml only)

Roxbury Russet [7.2% ABV] - Warren Morgan Orchards, WA - Roxbury Russet is believed to be America’s oldest heirloom, discovered in the 17th century in Massachusetts Bay Colony. It has a crisp nose and flavor profile, with a musky aroma and notes of sage, kumquat acidity, snappy tannin, dried leaves, minerality and clay. 100% Roxbury Russet apples from Warren Morgan Orchards, WA. 2020 Vintage This cider is semi-dry. Stoke Red [6.7% ABV] - Ringsrud Orchards, WA - Stoke Red is a traditional English cider apple with the lighter tannic expression of ice tea offset with apple skins, flint minerality, and a refreshing acidity. 100% Stoke Red apples from Ringsrud Orchard, WA. 2021 Vintage This cider is semi-dry. (750 & 375ml)

Yarlington Mill [7.7% ABV] - Ringsrud Orchard, WA & Idyll Acres, OR - Yarlington Mill is a traditional English cider apple with silky and soft tannin and a dark fruit character, reminiscent of dried apricot crossed with cocoa nibs. It is both smooth and substantial. 85% Yarlington Mill, 10% Bramley Seedling, 5% Brown's Apple apples grown at Ringsrud Orchard in Washington and Idyll Acres in Oregon. 2021 Vintage. This cider is semi-dry. (375ml & 750ml)

Calville Blanc d’Hiver [7.5% ABV]Ringsrud, WA – A French eating apple that dates back to the early 1600s, at least. The apple evokes the high-pitched and heady aromas and flavors of lemon zest, pine needle freshness, and grapefruit, finished with a kiss of sweetness. 100% Calville Blanc d'Hiver apples from Ringsrud Orchard. 2021 Vintage. This cider is medium. French Cider Apples [6.9% ABV]Idyll Acres, OR and Ringsrud Orchard, WA – Traditional French cider making values apples that exude dark, earthy, and enigmatic character. We've blended 8 different Fench cider apples and together they evoke caramel, dates, brown sugar, hay, toasted marshmallow, and leather. They are thick, rich, and complex, with prominent tannin. Vilberie, Muscadet de Bernay, Bedan, Nehou, Reine de Pommes, Calville Blanc d'Hiver, Marie Menard, and Marechal apples grown at Idyll Acres and Ringsrud Orchard. 2021 Vintage. This cider is medium. Marechal [6.3% ABV]Idyll Acres, OR – Marechal is a traditional cider apple named after the military rank Marshall.  It is reminiscent of dark chocolate, figs, dates, and coffee. It is deeply tannic, dark, and rich. Its complexity is offset with a bright and fruity sweetness. 75% Marechal, 20% Wickson, 5% Reine de Pommes apples from Idyll Acres, OR.  2019 Vintage. This cider is medium. (750ml only)

Reine des Pommes [6.8% ABV]Idyll Acres, OR – Reine des Pommes is a traditional cider apple whose name means "queen of apples." Its flavor is a mesmerizing interplay of amaretto, vanilla, honey, and woody tannin, offset by a refreshing lemon acidity. 75% Reine des Pomme and 25% Wickson apples from Idyll Acres Orchard. 2021 Vintage. This cider is medium. Wickson Crabapple [7.7% ABV]Ringsrud Orchards, WA – A modern crabapple with high sugar content, balanced with razor sharp acidity. The aroma and flavor profile reminds you of green and yellow grapes, it is floral and luscious. The finish is persistent, tart and elegant. 100% Wickson apples grown at Ringsrud Orchards, WA. 2019 Vintage. This cider is medium. (375ml only)


Methode Ancestrale:

Methode Ancestrale is the world’s oldest method for sparkling production. The process is a deliberate and complex fermentation in which nothing is used but the apple. The fruit produces the sparkle, the aroma, and the flavor on its own. These bottles are aged sur lees and disgorged by hand.

Methode Ancestrale Ela Family Farms [7% ABV] - Ela Family Farms, Hotchkiss, CO - A blend from Ela Family Farms, a fourth generation Colorado Western Slope fruit grower, including Esopus Spitzenberg, Jonathan, Pitmaston Pineapple, Golden Delicious and others. This sparkling cider boasts the character of tangerine, clove, fruit cocktail, a whiff of banana, and minerality. This bottle was aged 30 months sur lees and disgorged by hand. 2020 Vintage. This cider is semi-dry.
